This recipe is incredibly delicious, but it assumes that you have access to a microwave oven on the road. It uses two microwavable, disposable paper bowls1, four rubber bands, and one or two plastic spoons1 as the only cooking / eating utensils. It is a complete meal in itself with plenty of protein. It is so amazingly filling that you won’t need another meal for at least 12 hours!
Using two paper bowls1 and four rubber bands, you can make a disposable “pressure cooker” for the microwave. The purpose of a pressure cooker is to speed up cooking time, save energy, and so the ingredients don’t dry out.
1. To a 20-oz. microwavable, disposable paper bowl1 add approximately 14 ounces of scrubbed potatoes2 (Enough to fill the bowl ½ full after they are “mashed.” The potatoes should be as close to the same size as possible. Otherwise, the smaller potatoes will tend to become overcooked, and the larger ones undercooked.)
2. Add a small amount of water.
3. Place a second 20-oz. disposable paper bowl upside down on top of the first.
4. Secure the two bowls together using four equally spaced rubber bands.
5. Microwave the potatoes on high for 6 minutes. (I do not use the “Potato” button because the pressure cooker fools the sensor and causes the potatoes to be undercooked.)
6. After removing the assembly from the microwave, remove the rubber bands and save them for next time.
7. Save the top paper bowl for use as the bottom paper bowl next time.
8. Stab each potato with a plastic spoon1 to make sure that they are soft all the way to the center. If not, repeat steps 3 through 7 with a microwave time of 2 minutes instead of 5 minutes.
9. Using the plastic spoon, break the potatoes up into small pieces. (In order to prevent the plastic spoon from melting, break up the potatoes with a quick, stabbing motion.)
10. Add a liberal amount of salt.
11. Add some black pepper and/or curry powder.
12. Fill the remainder of the bowl with Swad® Chevdo3.
13. Add approximately ¼ stick of soft butter4.
14. Microwave on high for 30 seconds.
15. No need to mix. (Mix while eating.)
16. Serve while still warm with approximately 8 oz. of sour cream5 as a condiment.

2 Sweet potatoes, yams or broccoli could be substituted for the potatoes. Cauliflower would also be a good substitute in which case the microwave time should be decreased to 3 minutes.

A good substitute for Chevdo is Shamiana® Chevda. Swad Chevdo and Shamiana Chevda are available from East Indian grocery stores. The Chevdo/Chevda could be completely omitted, in which case the quantity of potatoes should be increased by about 50%, and the microwave time should be increased by 1 minute.
