Basmati rice, also known as “popcorn rice,” is the world’s most flavorful and nutritious. “Normal” white rice is bleached brown rice. The bleaching process takes away many of the nutrients. Basmati rice, on the other hand, is naturally white, and therefore needs no bleaching. It may be purchased at most large grocery stores, at health food stores, or at East Indian grocery stores. Try eating it instead of popcorn the next time that you watch a movie at home.
In order to prepare this recipe, you will need the “Meals in Minutes™ Microwave 6 Cup Rice Cooker Set,” manufactured by Progressive International Corp. (http://progressiveintl.com). I purchased mine at Walmart™ for $5.96. I found it on the shelf above the microwave ovens.
(Makes 1 to 2 servings)
1. Put ½ cup of basmati rice into the rice cooker.
2. Wash rice two or three times.
3. Add 1½ cups¹ of water.
4. Add ½ teaspoon of salt.
5. Add 2 tablespoons (¼ stick) of butter.
6. Place the inner and outer lids on the rice cooker according to the instructions which came with it.
7. Microwave on high for 12 minutes².
8. Add a handful of cashew halves and pieces. (optional)
9. Turn rice over gently using the special spoon which came with the rice cooker set.
10. Keep covered until ready to serve.
¹ More water than normal is needed because approximately ¼ of it will boil away.
² The exact time will vary from one microwave oven to another, so you may have to experiment a bit until you get it right.
