If so, then this recipe may be for you!
For years, I used the standard brown sugar filling recipe, but now the very thought of it makes me feel nauseated. The following recipe is much, much better.
1. Wash a medium sized acorn squash.
2. Placing the squash onto a microwavable paper place, stab it a few times with a knife. (This is so that it won’t explode in the microwave.)
3. Microwave it on high for 3 minutes.
4. Allow the squash to cool for a few minutes. (If I bring a number of acorn or button squashes home from the grocery store, I follow steps 1 through 4 for each of them. I let them cool to room temperature and then store them in the refrigerator until I’m ready to use them.)
5. Cut the squash in half.
6. Scoop out and discard the seeds.
7. Setting aside one of the halves, put the other half into a 20 oz. microwavable paper bowl¹.
8. Put a small amount of water in the bottom of the bowl.
9. Turn a second paper bowl upside down and put it on top of the first bowl in order to form a small enclosure which will help to retain the moisture.
10. Microwave on high for about 4 minutes or until very tender.
11. While the squash is cooking, melt 2 tablespoons (¼ stick) of butter².
12. Using a plastic spoon¹ which will later be used for eating, stab the soft innards of the squash over and over again so that the melted butter can be more easily absorbed. (Spread the squash out so that it fills the entire bowl by allowing the skin to split.)
13. Add the melted butter².
14. Add a liberal amount of salt.
15. Add a liberal amount of curry powder.
16. Add some of powdered chili pepper.
17. Add some of powdered basil.
18. Serve with sour cream as a condiment.
¹ At Walmart™, I’ve purchased Dixie™ brand 20 oz. microwavable paper bowls in packages of 30 for US$2.97 and Diamond™ brand plastic spoons in packages of 48 for US$.96.
² One obvious disadvantage of the above recipe is that it creates “dirty dishes.” A knife is required to cut the butter, and a container is required to melt the butter. For a good way to melt the butter without creating any dirty dishes, see “The World’s Best Popcorn” (http://llbest.com/?P=6c).
