Travelin’ Recipe: Hot, Buttery Peas

This recipe is incredibly delicious, but it assumes that you have access to a microwave oven on the road.

1. Using a disposable plastic spoon1, add a heaping spoonful of mango relish2 to a 20-oz. microwaveable paper bowl1.

2. Add approximately ⅓ cup of instant oatmeal3.

3. Add approximately ¼ cup of powdered milk3. (optional)

4. Add approximately ¼ stick of soft butter4.

5. Including the liquid, add a 15-oz. can of sweet peas5.

6. Mix.

7. Microwave on high for 2 minutes. (It's okay to leave the plastic spoon in the bowl while microwaving.)

8. Mix.

9. Serve while still hot including the disposable plastic spoon.

¹ At Walmart™, I’ve purchased Dixie™ brand 20-oz. microwavable paper bowls in packages of 30 for US$3.38 and Diamond™ brand plastic spoons in packages of 48 for US$1.14.

² Available at East Indian grocery stores.

³ Approximately ⅓ cup of instant cream-of-wheat, or instant grits could be substituted for the Instant oatmeal. Among my favorites are dark red kidney beans / instant grits and diced potatoes / instant cream-of-wheat. Instant rice approximately equal to the amount of liquid in the can could also be substituted, in which case the preparation should be allowed to sit for 5 minutes after microwaving so that the rice has time to absorb the liquid after which you may want to microwave it again for 30 seconds to reheat it.

A 15-oz. can of almost any other type of vegetable could be substituted for the potatoes.
