Here’s a fast, easy way to prepare 1-2 servings of mixed vegetables:
1. Into a 1 quart microwavable bowl, put ½ teaspoon of salt.
2. Add one package of Instant Oatmeal Regular (I use Our Family™ brand, which comes in boxes of 12 “packets”).¹
3. Add a can of mixed vegetables² (usually beans, carrots and corn) (Do not drain).
4. Add ¼ cup of water.
5. Add (mix later) 1 heaping teaspoon of Patak’s™ Hot Mixed Relish³. (Available at health food stores and East Indian grocery stores.)
6. Microwave on high for 3 minutes.
7. Add ½ of a block of cream cheese (4 ounces).
8. Add ½ cup of cashews. (optional)
9. Stir until all of the ingredients are thoroughly mixed.

¹ A package of Instant Cream of Wheat Original or ½ cup of instant rice could be substituted for the “Instant Oatmeal.” However, using the instant rice requires that the mixture be allowed to stand for 2 to 4 minutes after it has been heated in the microwave, so that the rice can absorb the extra liquid.
² I use Green Giant™ Garden Medley because it doesn’t have any obnoxious ingredients such as onions and/or garlic.
³ The relish not only makes the preparation more tasty, but the hot spices are an aid to digestion. The relish also improves the appearance of the preparation, which is an additional aid to digestion.
