After years of trial and error, I’ve finally come up with a recipe for pinto bean soup which, for the following 3 reasons, represents a revolution in the fine art of cooking! And for reason #3, it's even more revolutionary than my pea soup recipe:
1. It consists of only 5 ingredients.
2. By doing the cooking in less than 6½ minutes using a microwave oven, it takes time/energy savings to a whole new level.
3. The problem of eating undercooked pinto beans’ causing diarrhea has been solved!
According to How to Avoid Food Poisoning from Undercooked Beans, “Pinto beans: Soak overnight, cook for 1½ hours, pressure cook for 10 minutes.” So how do we get away with cooking the beans for such a short time? The secret is to combine 1 part beans and 3 parts oatmeal, grind the combination into a fine powder, and then add the powder to boiling milk! Somehow or other, the oatmeal counteracts the effects of the diarrhea causing chemical(s) contained in the pinto beans, and the fact that the mixture has been ground into a fine powder causes it to be cooked instantly when added to the boiling hot, spiced milk!
1. Put a 6 cup microwavable bowl on top of your large kitchen scale.
2. Zero the scale.
3. Add 16 ounces of milk. (½ cup of powdered milk dissolved in 14 ounces of water could be substituted.)
4. Add a super heaping teaspoon of Howie’s Best Curry Powder.
5. Using a wire whisk, mix thoroughly.
6. Zero the scale.
7. Add 4 ounces (1 cup dry measure) of American style cheese broken into small pieces or ½ stick of butter broken or cut into small pieces.
8. Bring the mixture to a vigorous boil in your microwave oven (If your microwave oven is rated at 1000 watts, like mine is, then this should take between 5 and 6½ minutes.)
9. While the preparation is being microwaved, add a heaping ¼ cup of oatmeal to your spice grinder.
10. Also add a level tablespoon of dried pinto beans*.
11. Grind until all the little “ticks” stop, which means that the mixture has been ground into a fine powder.
12. When the liquid is through being microwaved, add the pinto bean/oatmeal powder a little at a time while carefully stirring with a wire whisk in such a way that no lumps develop.
13. Serve immediately because lumps may develop if the soup is reheated.
* Dried great northern beans or dried black beans may be substituted for the dried pinto beans, but not dried kidney beans. Substituting dried kidney beans will cause diarrhea. This recipe may also work with other beans which are notorious for causing diarrhea when undercooked, such as dried navy beans, but, so far, this has not been tested.
